Position Summary:
Chateau Victoria Hotel & Suites is seeking an experienced and passionate Chef to lead daily kitchen operations and deliver exceptional culinary experiences across our food and beverage outlets. This role is ideal for a hands-on culinary leader who thrives in a hotel environment, values quality and consistency, and inspires teams through strong leadership and creativity. Reporting to the F&B Manager and Operations Manager, the Chef de Cuisine is responsible for menu execution, kitchen management, employee development, food quality, and maintaining the highest standards of safety, cleanliness, and guest satisfaction.
Key Responsibilities:
Culinary Leadership & Execution
- Oversee day-to-day kitchen operations, ensuring consistent execution of menus and recipes
- Maintain high standards of food quality and presentation
- Collaborate with hotel management and the culinary team on menu direction, development and execution
Team Leadership & Development
- Lead, mentor, and motivate kitchen staff to foster a positive and professional work environment
- Participate in hiring, onboarding, training, scheduling, and performance management
- Promote teamwork and accountability both in the kitchen and as a leader in the hotel
Operations & Financial Management
- Assist with food costing, inventory control, ordering, and waste reduction
- Support budget goals by managing labor and food costs effectively
- Ensure proper storage, rotation, and utilization of products
Health, Safety & Standards
- Ensure full compliance with food safety regulations, WorkSafeBC standards, and hotel policies
- Maintain a clean, organized, and efficient kitchen environment
- Uphold Chateau Victoria’s standards, values and commitment to guest experience
Collaboration & Guest Experience
- Work closely with F&B management, front-of-house and hotel leadership to deliver seamless service
- Receive and respond professionally to feedback
- Contribute to an elevated dining experience that reflects the hotel’s reputation and values
Qualifications & Experience
- Red Seal certification or equivalent culinary training preferred
- Valid Food Safe Certification
- Minimum 5 years of progressive leadership experience in a hotel or high-volume kitchen
- Strong knowledge of modern culinary techniques and menu development
- Proven leadership, communication, and organizational skills
- Experience with cost control, inventory management, and food safety compliance
- Ability to work flexible hours, including weekends, holidays, and evenings
