Lora Bay Golf Club is seeking a skilled and passionate Chef de Partie to join our culinary team in Thornbury.
At Lora Bay, we take pride in crafting an extraordinary dining experience. Under the guidance of renowned Chef Mark McEwan and his team at McEwan Restaurant Consultants, our culinary program is built on expertise, innovation, and the highest standards of excellence. Chef Mark’s insights shape our menus, refine our kitchen operations, and elevate our service, ensuring every dish reflects culinary mastery. This collaboration also provides our kitchen team with hands-on training, fostering growth and skill development under industry-leading mentorship.
Reporting to the Executive Chef and Sous Chef, the Chef de Partie is responsible for preparing and presenting high-quality dishes while maintaining the highest standards of efficiency, cleanliness, and food safety standards. This role also involves supervising junior kitchen staff and ensuring daily kitchen operations run smoothly.
Full-time and part-time positions are available starting the end of April through the end of October.
Key Responsibilities:
- Oversee and direct the kitchen before, during and after service
- Responsible for daily mise en place planning and execution across all stations
- Ensure stations are ready for service, banquets, and event
- Maintain kitchen organization, cleanliness and efficiency at all times
- Ensure all dishes are executed according to standardized recipes, plating guides, and portion controls
- Maintain consistency across à la carte service, banquets, and special events
- Actively tastes and adjust food during service to ensure quality and seasoning standards
- Monitor par levels and communicate with the Executive Chef or Sous Chef
- Ensure proper use, cleaning, and basic maintenance of kitchen equipment
- Report equipment malfunctions or safety hazards to the Executive Chef promptly
- Expedite food items by calling the line and organizing food runners, acting as the point person for all food leaving the kitchen
- Relieve the Executive Chef on days off
- Select, train, evaluate, lead, motivate, coach, and discipline all employees in the kitchen’s food production area to ensure that established cultural and core standards are met
- Assist with creating monthly training schedules and execute training professionally and according to established standards
- Assist in the planning and development of recipes and ensure the correct preparation and presentation at a consistent level for all food items prepared through production and demonstration
- Monitor incoming food shipments to ensure they meet established purchasing specifications and fosters awareness of the importance of food preparation and quality
- Ensure all stocks are stored and rotated correctly in line with Food Safety requirements, following company policy to meet statutory legislation., including recording temperature checks of food commodities
- Assist in ensuring the profitability of food operations and gross profit management, including carrying out food stock-takes as required
- Follow all procedures and processes for food and beverage controls to meet resort requirements
- Assist with maintaining and improving departmental operating standards
- Maintain full awareness of and strictly observe Food Safety regulations and requirements
- Attend training sessions when required
- Maintain full awareness of and strictly observe Health & Safety and fire procedures
- Maintain awareness of and complies with restaurant and company rules and regulations as outlined in the team member handbook
Qualifications:
- 3+ years of experience in a casual fine dining kitchen, including 2 years of experience in a leadership role in the kitchen
- Completion of a chef training diploma (preferred)
- Ontario Food Handlers Certification (required)
- Red Seal Certification (preferred)
- Ability to report on food costing, labour reports and scheduling
Work Arrangement:
- Strong ability to work efficiently in a fast-paced, high-pressure environment
- Demonstrates a high regard for health and safety, consistently following safe work practices and procedures
- Comfortable working in varied kitchen settings, including:
- Indoor and outdoor kitchens in a high-heat environment
- Fast-paced industrial kitchens with open flames, deep fryers, and grills
- Physical ability to:
- Stand up to 90% of the shift
- Lift up to 50 lbs.
- Work with sharp knives, hot equipment, and liquids.
- Occasionally kneel, push, or pull kitchen equipment.
- Work varied shifts, including evenings, weekends, and holidays
Compensation:
- Pay: $23.00 per hour
