Job Description Summary The Master Cheesemaker’s role will be to take full ownership of the plant’s cheese production recipes, from recipe design to implementation and upkeep. The Master Cheesemaker will be responsible for the review and optimization of cheese recipes to ensure achievement of finished product specifications, raw material cost and cheese performance targets. He or she will be at the forefront of trouble-shooting any issues that are causing deviations from said targets. The Master Cheesemaker will also be periodically involved in new recipe development, with the support of the R&D and Product Development group. Finally, this role also covers responsibility for continuous development of cheesemaking expertise at the plant operational level.
Overview of the role: Based out the Brandon, MB location and working in partnership with the Plant Manager, the Master Cheesemaker’s role will be to take full ownership of the plant’s cheese production recipes, from recipe design to implementation and upkeep. The Master Cheesemaker will be responsible for the review and optimization of cheese recipes to ensure achievement of finished product specifications, raw material cost and cheese performance targets. He or she will be at the forefront of trouble-shooting any issues that are causing deviations from said targets.
The Master Cheesemaker will also be periodically involved in new recipe development, with the support of the R&D and Product Development group. Finally, this role also covers responsibility for continuous development of cheesemaking expertise at the plant operational level.
The successful candidate possesses a strong combination of initiative, analytical skills, specialized knowledge and pedagogical ability. This leadership role is ideal for the candidate who is willing to work in a hands-on environment, all while keeping a broader, analytical scope of cheese recipe performance and ensuring the cascading of cheesemaking know-how within plant operations.
How you will make contributions that matter:
- Recipe design: Select ingredients, cheese-make parameters and finished product composition targets as a function of regulations, cost and product performance expectations;
- Recipe maintenance: Trouble-shooting, root-cause analysis of issues, making recipe adjustments and giving instructions to cheesemakers and supervisors for corrective action;
- Recipe performance: Periodic review of financial performance with Plant Manager and Accountant; making necessary recipe adjustments to optimize raw material cost;
- Product performance: Review QA and internal product performance testing reports. Actively participate in sensory evaluation and grading to ensure optimal product quality;
- Continuous development: Regular upkeep with cheesemaking technology through internal and external training, as well as developing cheesemaking know-how on the production floor;
- Support Cheese Production Department as required.
You are best suited for the role if you have the following qualifications:
- Bachelor’s or College degree in Dairy Science or Food Science preferred with a focus on dairy processing, preferably cheese;
- 3+ years of experience working in a Cheese manufacturing facility;
- Strong communication skills;
- Analytical and creative problem-solving skills;
- Demonstrated initiative and leadership abilities.
