Job Description:

The Head Cook is responsible for leading the preparation of high-quality food in a timely, efficient, sanitary and consistent manner. The Head Cook must be prepared to work in a fast-paced, high-pressure work environment, while maintaining the organizational ability to identify and act on job duties quickly and effectively. The Head Cook must be prepared to work as a team member in a dynamic workplace, follow all safety procedures, and have a high threshold for heat in a kitchen environment.

Job Function and Duties:

  • Perform food preparation, planning, and presentation duties, for all cold items in the kitchen, including washing, chopping, dicing, and carving fruits and vegetables;
  • Season food that will be served cold and/or hot;
  • Prepare salads, hors d'oeuvres, cold sauces, soups, hot dishes, charcuterie, terrines, pates, and aspics;
  • Follow any and all recipes;
  • Ensure the proper use of scales and measurements in all recipes, portioning, and food production;
  • Plate completed dishes, including caviar, cheese, aspics, and charcuterie platters;
  • Assist with the preparation and planning for service;
  • Restocks all items as needed throughout shift.
  • Perform pre-shift mise en place to ensure that assigned stations are prepared for service;
  • Assist with the purchase of items for use in the kitchen
  • Maintain product consistency by regularly conducting inspections of portions, and the appearance of food items;
  • Prepare dishes for customers with food allergies or intolerances.
  • Ensure that cleanliness and hygiene are maintained in the various kitchen areas including refrigerators, storerooms, and food preparation and production stations and that food products are rotated to ensure high standards of freshness;
  • Ensure food is stored in appropriate containers and labelled; minimizing waste and maximizing quality;
  • Strive to uphold a safe working environment and be health and safety conscious and actively involved in maintaining and improving a safe work environment;
  • Report any maintenance issues or health and safety incidents;
  • Attend pre-shift meetings as necessary for the day;
  • Adhere to all guidelines, policies, rules and regulations;
  • Perform other related duties as required.

Qualifications:

  • Proven experience as a cook in a restaurant or food service establishment.
  • Knowledge of cooking techniques and culinary terminology.
  • Ability to follow recipes accurately and consistently.
  • Strong attention to detail and organizational skills.
  • Ability to work well under pressure in a fast-paced environment.
  • Excellent communication and teamwork skills.
  • Flexibility to work evenings, weekends, and holidays as needed.
  • Certification in food handling and sanitation
