Position: Lodge Employee (Serving Focus) Type: Full Time, Seasonal Location: Albreda Lodge, BC Reports to: Albreda Lodge Manager About Albreda Lodge Albreda Lodge is part of the Mike Wiegele family, offering world-class heli-skiing and mountain experiences in the heart of British Columbia. We pride ourselves on delivering exceptional hospitality in a unique setting. Overview: Although the focus of this position is breakfast and lunch service, this position is also responsible for helping with lodge activities in all departments as directed, ensuring the department functions are being maintained and the highest level of service is being provided for our clientele. Responsibilities: All Lodge staff are responsible for collectively assisting the Lodge Management in executing, monitoring, and evaluating the quality and performance of daily FOH operations, specifically in the Dining room, Nook and Great Room areas. Work with the Albreda service lead and service team to prepare and edit beverage menus including coffees, wine, and bar to reflect stock, past guest history and current guest requests. Track guest requests and communicate any specific food and beverage requests to the Service Lead. Work with the Albreda Service Lead and service team to define, tailor, execute and exceed current industry service standards. Take detailed and clear food and beverage orders from customers and ensure these are given to the appropriate person to execute. Maintain familiarity with the composition of all menu items. Serve food and beverages in accordance with MWHS standards, but above all in a professional, courteous manner. Clean agreed designated areas, in accordance with procedures, morning/evening routines and hygiene requirements. Change table linen as required and ensure dirty or damaged linen is counted and exchanged for clean, usable items. Clean and refill cruet and condiment sets to ensure consistent supply. Ensure that flowers and table decorations are fresh and comply with agreed standards. Set tables to laid-down standards, ensuring that all items used are clean, undamaged and in a good state of repair. Ensure sideboards at stations are adequately stocked with replacement cutlery, linen, or other established needs, be they food or equipment. Clean tables and ensure they are cleaned as soon as it is apparent that guests have finished their food or drink with an acceptable balance between speed yet allowing guests to finish their meal without feeling rushed. Ensure that customers are correctly charged for liquor sales in accordance with the procedures of our establishment. At all times to be aware of and practice good customer relations, assisting the guest in any way which does not adversely affect other customers. Attend to customer complaints immediately and satisfactorily. Record and track the guest’s preferences and dislikes. This will be added to guest history. Clean agreed designated areas, in accordance with procedures, morning/evening routines and hygiene requirements. Be continually aware of & maintain the highest standard of personal hygiene and dress. Ensure dress code is followed and standards of dress for fine dining expectations are met. Assist in any additional Lodge duties as required. Light Housekeeping, and limited Front Desk and Boutique exposure will be expected as needed. Training will be provided. Serving Duties: Preparing & setting the tables with appropriate presentation. Responsible for attractive and intricate dinner table set ups, après station set up, breakfast display and continental buffet. Clearing tables, taking a la carte orders, serving food and all cleanup. Cleaning prior to and after service. Aid in garbage removal from the kitchen and assist with the Albreda recycling program including separation of recyclables. Aid and assist the kitchen in dry food rotation, bar storage, shared dry storage and wine room organization. Daily routine on deep cleaning the Bar, dining room, nook, great room, boutique, and deck service areas. Understand and have knowledge of our products. This includes the menu, wine, coffees, and beverages as well as our MWHS packages. Serving & clearing tables in a kind courteous fashion. Assisting with dish washing. Polish glassware, plateware & cutlery. Housekeeping Duties: Moderately physical in nature. Exposure to cleaning industrial products. Carrying light to heavy loads. Washing and folding linens. Cleaning bathrooms. Using and maintaining light cleaning equipment. Working under time constraints. Respecting guest’s space & property. Boutique Duties: Responsible for retail sales in Boutique. Maintain gift basket levels. Ensure all product is displayed in an attractive manner Keep the stock room clean, in order, folded, and organized. Front Desk and Administration Duties: Provide prompt acknowledgment, friendly welcome, and efficient check-in of guests, as directed by the Lodge Manager of Lodge Assistant. Ensure Waivers (liability release forms) are completed properly and witnessed. Ensure that guest-related housekeeping and maintenance problems are communicated to those areas for prompt attention. Keep Front Desk and Front Desk office neat, clean and organized. Be resourceful as Lodge employees are an information source for guests. Ensure guest confidentiality. Evaluate guest needs and exceed guest expectations as much as possible. General Duties: Have a thorough knowledge of our facilities, hours, operational procedures, and products. Be aware of special functions within the lodge and larger resort. Be proactive in selling the products and service we offer. Be resourceful as Lodge employees are an information source for guests. Ensure guest confidentiality. Evaluate guest needs and exceed guest expectations as much as possible. Address clients by name and always introduce yourself. Strive to ensure effective communication and teamwork between all departments. Weekly lodge meetings and daily shift chats are mandatory. Be aware of safety in all areas, including fire prevention and protection, power outage procedures, and general operational safety practices. Unsafe conditions, equipment or practices are to be reported in detail to the lodge manager and head Chef. Attendance at the Saturday evening Meet and Greet the Guests is required as directed by the Lodge Manager. It is key that the guests know who you are, and what you do, Observe and when possible, anticipate guest requests and needs. Special requests or surprises are to be coordinated through the Albreda Manager, Albreda Head Chef and Albreda Service Lead. Given your daily interaction with the guests, be prepared to contribute to planning and execution of changes in the overall routine of service. Strive to achieve above average scores in the MWHS customer service comment card ranking. General wine knowledge, food knowledge, service knowledge. The ability to pair wine or spirits with the menu, on your own or with direction. Excellent table side manner. Must maintain an immaculate bar, dining room, service station and work environment. Have micro-brewery knowledge, and knowledge of the local craft beer in Valemount and Thompson Valley. Highly flexible, with solid interpersonal skills that allow one to work effectively in a diverse working environment. Knowledge of a second language (preferably German, French or Spanish): spoken & written an asset. Hours will vary throughout the season, and you will be expected to be flexible and available for work when necessary (ie: down days, spring hours) to ensure optimal customer service throughout the season.
