The Chef is a critical role within our communities as it impacts the lives of residents through the strong leadership and motivation of Sienna team members.
As a Chef your typical day will impact in the following ways:
• Supporting Hospitality Style Dining Service through superior food
production practices, plate presentation and garnishing by following the menus
and resident prescribed diet information, setting up equipment and supplies
for food preparation, following standardized recipes at appropriate
temperatures and in portion controlled quantities.
• Providing direction to team members in basic food preparation procedures,
prep work, plating of food and assisting in the orientation of new team
members.
• Completing all necessary documentation (food and refrigeration
temperatures, dishwashing machine temperatures if applicable, and menu
changes).
• Ordering and monitoring quality of food supplies received.
• Alerting team leader to problems that impact food quality and service and
makes recommendations about corrective actions.
• In the absence of the team leader, assuming responsibility for
departmental operations including team member replacement, making menu changes
as necessary, requisitions and purchases food and other supplies from
authorized suppliers, and maintains records as directed.
• Managing and supervising team members, including hiring, evaluation and
managing performance, and taking disciplinary action as require.
• Participating actively in department's Quality Management program.
• Complying with all provincial regulations, established food and beverage
department policies and procedures.
• Representing the culinary team at resident meetings and taking action to
resolve resident culinary issues and concerns.
• Participating actively in planning/preparing special occasion and theme
meal days.
• Directing the orientation and training of new team members.
• Following all health and safety policies and procedures.
• Working safely to reduce the risk of injury to self, co-workers, and
residents.
• Maintaining a clean, safe environment for residents utilizing infection
control principles.
• Maintaining a sound working knowledge of their role & responsibilities
during all emergency situations when working different shifts.
• Assisting with monthly food inventory count.
• Performing other duties as assigned.
Must haves:
• Grade 12 minimum education required.
• Red Seal designation required or graduate of a recognized college food
preparation program willing to Red Seal certify.
• A minimum of 1-2 years’ experience in volume food preparation, catering
and special event preparation in the Hospitality or Retirement Residence
industry.
• A valid Safe Food Handling Certificate and Smart Serve certificate.
• Must possess good public relations and communication skills.
• Ability to work to deadline and flexible to work shifts (weekends,
evenings).
• All applicants must successfully pass the prescribed Vulnerable Sector
Check. Applicable to Ontario applicants.
• As part of legislative requirements, all successful candidates must meet
the provincial police check and tuberculosis screening requirements as
applicable.
