Job Description

We invite you to join the world of luxury hospitality at Fairmont Palliser as our new Bartender, Hawthorn Dining Room & Bar. Inspire and create the grandest experience for our guest, clients and colleagues every day. Create cutting edge and high dishes for our food and beverage outlets and banquets. You will serve as an ambassador of refined hospitality, showcasing the exceptional wines, premium spirits, and artfully crafted cocktails that define our elevated dining experience. With an intuitive sense of service, a warm and engaging presence, and a true passion for mixology, you will create memorable moments at the bar, each pour, shake, and stir worthy of celebration. Reporting to the General Manager, Hawthorn Dining Room & Bar.

Key Responsibilities

  • Adhere to all restaurant and hotel policies, procedures, and service standards, including Leading Quality Assurance and Sequence of Service, to deliver seamless luxury hospitality at every touchpoint.
  • Maintain detailed knowledge of all food and beverage menus, including wines, cocktails, spirits, and seasonal promotions, and understand the story behind each product, emphasizing our local-first approach to sourcing ingredients and beverages.
  • Accurately record, communicate, and serve all food and beverage orders in a timely, professional, and efficient manner, ensuring impeccable guest service at all times.
  • Create signature cocktails based on established recipes and maintain consistency in presentation and taste to uphold the bar’s standards of excellence.
  • Collaborate with the team to develop new cocktail offerings, contributing creative ideas and seasonal drink specials to enhance the guest experience.
  • Ensure compliance with liquor laws, practicing responsible alcohol service in accordance with Alberta regulations and hotel policy.
  • Oversee the daily opening and closing of the bar, including cleaning, stocking, garnish preparation, and other related tasks to maintain an organized and efficient work environment.
  • Maintain the cleanliness and readiness of the bar area at all times, ensuring a polished and inviting environment for guests.
  • Assist servers with beverage service, ensuring that drinks are delivered promptly and in perfect condition.
  • Support food service in both the dining room and bar sections as required, ensuring smooth service flow and guest satisfaction.
  • When operating with limited servers and one busperson**,**take responsibility for polishing your own glassware to maintain the high standards of presentation and ensure smooth service flow.
  • Maintain a safe and clean work environment, ensuring all Health & Safety standards are followed, and demonstrate the knowledge and tools to work safely and responsibly.
  • Perform additional duties as assigned by the Restaurant General Manager or their designate, always maintaining a high level of professionalism and commitment to service excellence.
  • Participate in ongoing training and assessments to maintain expert-level knowledge of all menu offerings, including food, wine, cocktails, spirits, and beer, ensuring confident and accurate guest engagement at all times.

Qualifications

What will you bring to this role?

  • Minimum of two years bartending experience in an upscale lounge/ Restaurant environment is required
  • Extensive knowledge of cocktails, wine and spirits, WSET or similar certifications is an asset
  • Must have excellent English language skills and be able to speak, read and understand at a professional vocabulary level
  • Be available to work a variety of shifts and days, based on business needs, with flexibility according to seniority level.
  • Must possess excellent customer service skills
  • Ability to work well under pressure
  • Must be self-directed and self-motivated
