Lead Brewer focus
- Meet with shift 10 mins prior to the beginning of shift and end of shift to communicate any equipment malfunctions, safety discussions, and an overview on what has been accomplished on the shift as well as any hand overs or holds.
- Lead the shift in brewing and beverage production; manage people schedule. Accountability for the smooth running of the brewhouse, cellar, centrifuging, cleaning including decision making on the shift.
- Ensure all resources are readily prepared for the shift and ensure yeast management and raw materials are maintained and quality checks completed prior to use.
- Responsibility for on-boarding and providing training to shift brewing team, ensure SOPs training is completed and signed to ensure safety and brewing standards are meet.
- Ensuring adherence to our statutory obligations, HACCP Plan, CFIA and Quality Management System. Take responsibility for ensuring good overall brewery hygiene including CIPs on vessels and product lines.
- Always ensure site security and be responsible for opening and closing the brewery when applicable.
- Work with the brewers for conduct the pre-inspect equipment for safety and operational concerns. Responsible for overseeing safe work practices and adherence for the shift. Upon training, providing First Aid and Fire Safety.
- Communicate with the Head Brewer on any equipment malfunctions, team performance and training competencies.
- Communicate with the Head Brewer on any concerns, usages of raw for effective inventory management. Advise on brewing run completions for ERP coordination
Brewing & Beverage Production

Performs all tasks associated with making great and consistent craft beverages, from recipe adherence to the packaging tank.

Prepares, organizes, and tracks all materials used during the brewing process. Monitors the processes and adjusts as required to meet Muskoka Brewery’s high-quality standards. Maintains accurate and timely reporting throughout the beverage processes.

Collects samples throughout the production process from brewing to package tank. Communicates with Packaging lead hand when packaging tanks is prepared.

Performs thorough sanitation duties including the cleaning and maintenance of equipment and utensils to ensure quality standards are met.
Quality and Freshness:

Working closely with the Quality and Brewing Team, the Lead Brewer will monitor the quality of production, end products and operational performance and quality and area sanitation.

Take measurements and conduct standardised tests on beer/wort to ensure compliance with Muskoka Brewery quality standards; factors such as gravity and pH
-
Work with the lab to perform Quality Control checks Wort production, monitoring fermentations and performing of cellaring tasks on a shift basis including but not limited to beer transfers, centrifuging, yeast handling, dry-hopping, and CO2/DO checks.

Conduct sensory evaluation such as Diacetyl, 3-MBT, DMS to proactively detect potential brewing quality concerns.

The quality and freshness of our products from raw material to the consumer is everyone’s responsibility, together we help to facilitate high standards, resolutions, and customer services at every opportunity.
Health and Safety:

Promote accident prevention by eliminating potential hazards and incorporating proper body mechanics in training procedures. Reports all shift incidents to the JHSC representative. Works with the People department should an injury occur.

Actively leads and participates in our safe operations by providing feedback and suggestions to the Head Brewer, Senior Director of Operations and/or the JHSC to contribute to the continuous improvement and expansion of our brewery.

Inspects equipment and performance continuous housekeeping duties to meet the sanitation expectations.
QUALIFICATIONS
- A minimum of 2 years in brewing with experience leading others.
- Successfully graduated for Brewery Operations Management
- Must be able to work in a team oriented with a desire to authentically lead a small team.
- Proven ability to manage priorities to meet the high expectations in safety, quality and efficiency.
- Excellent communication and organization skills.
- Strong understanding of equipment and the science of brewing
- Able to lift 50lbs.
- Able to work at heights (scissor lift and fall protection training will be provided)
- Able to work 12-hour shift, weekend and holiday schedules as required.
