Key Qualifications:
- Grade 12 education and/or equivalent, required
- Diploma from recognized Culinary College
- At least 1 year cooking experience required, preferably in an institutional food service environment.
- Valid Food Handlers Certificate, required
- Must have good knowledge of and apply HACCP protocols
- Ability to communicate effectively, read, write, follow instructions, recipes and use basic math skills
- Experience in a cold-plating and a cook-chill environment an asset
- Be physically capable of performing the essential duties of the job
- A positive work and attendance record is essential
- Ability to work under minimal supervision to complete assigned tasks
- Ability to work as part of a team
- Excellent customer service skills
Position Summary:
-
Prepares, cooks and chills food items following standardized recipes and portion standards
-
Adheres to recipes, portion sizes and preparation methods as specified.
-
Does necessary advance preparation of foods (e . g . for soups and entrees) to ensure efficient production .
-
Operates large food service equipment such as steamers, grills, steam kettles, convection and alto sham ovens, etc .
-
Follows tempering guidelines to pull food products from freezer, remove from shipping containers, place on pans, label and store in fridge.
-
De-cases and decants food into serving pans following guidelines provided . Labels containers and delivers to appropriate location .
-
Follows proper food handling procedures including maintaining food in temperature safety zone .
-
Determines appropriate food leftover use and monitors spoilage in consultation with a cook or team leader.
-
Stores food in appropriate container, labels correctly, and places in appropriate storage location
-
Maintains accurate food production records .
-
Practices safe and proper use of food service equipment.
-
Provides input for food supply orders .
-
Identifies maintenance needs and informs Team Leader or submits work orders as appropriate .
-
Maintains and sanitizes work area and all related equipment.
-
Performs other related duties as required.
Physical Demands
- Considerable walking, standing, bending and lifting - up to 50 lbs .
- Standing for long periods of time in one spot
- Working in both hot and cold temperature environments, Including work in a cold environment (freezer) for a period of each day
