Job Description

The Executive Sous Chef is in a visible role, overseeing the day-to-day operations of consistent, high-quality culinary operation. The role will be based in the Daylodge primarily overseeing 6 outlets and covering for the Resort Executive Chef in their absence. This role focuses on leadership, planning, and ensuring the highest standards of food service are met. The Executive Sous Chef works under the supervision of Resort Executive Chef, and closely with all culinary departments at Sunshine.

Job Functions

Oversight of specific outlet back of house culinary team, including:

  • Overseeing the day-to-day back of house operations, primarily in the Daylodge, but able to float between locations as required.
  • Being present on line to ensure the culinary team is supported during peak service times.
  • Ensuring that all food service standards, health and safety regulations, and quality controls are followed consistently and thoroughly
  • Able to be hands on in food preparation and serving, when needed.
  • Accountable for all mountain culinary operations in the absence of the Resort Executive Chef.

Administrative and Reporting Responsibilities

  • Managing the training and development of back of house employees
  • Timely and accurate incident and deficiencies reporting.
  • Resolving issues promptly and engaging with Management team on recommendations and progress reports of outlet
  • Timely completion of documentation e.g. daily safety meetings, employee training, payroll and scheduling.
  • Maintaining effective schedules and properly assigning department tasks to meet business needs.
  • Conducting performance reviews, assist in hiring and corrective actions.
  • Communicating and adhering to company initiatives and policies, and, promoting a safe and healthy work environment.
  • Timely and accurate reporting of all incidents and deficiencies to appropriate personnel.
  • Scheduling and payroll duties as required.
  • Collaborating with the Resort Executive with regard with menu planning, development, and implementation.
  • Responsible for Period end inventory counts for multiple outlets as instructed by the Resort Executive Chef.

Qualifications

  • 5+ years as a sous chef in a fast paced multi-outlet/multi-concept environment. Prior Exec Sous experience is an asset.
  • Red Seal Certification is an asset.
  • All food handling / food safety permits are required.
  • Good computer knowledge (MS WORD and Excel), company HRIS systems
  • Strong communication & organization skills
  • Outgoing, positive, friendly attitude.
  • Calm under pressure and patient, able to exercise good decision making.
  • Communicate effectively in English, both written and verbally.
  • Prepared to work flexible schedules (weekends, holidays)
  • Maintain professional conduct when in uniform, on or off-duty, and online.
  • Effectively provide training, support, and assistance to coworkers.
  • Attend and actively participate in meetings and training.
  • Must be neat, punctual, and dependable.
  • Experience in menu costing, menu planning, analytics Additional Considerations
  • Employees must always be of sound mind, exhibit good judgment, and report to work fit for duty.
  • This position works at high altitude and at times, in inclement weather. An appropriate level of physical fitness is required.
  • Some required uniform pieces are provided.
  • The Exec Sous Chef must be willing to live on mountain.
