Job Reports To:
Executive Chef
Key Activities
Reporting directly to the Executive Chef, the Stewarding Manager leads the stewarding department and provides support to the culinary operations including hiring, training, and supervising of staff.
The incumbent will work closely with all Food & Beverage departments to ensure that all equipment is available and operating as per standards for day-to-day operations. The Stewarding Manager is accountable for all F&B equipment and will establish monitoring systems to track and to manage the life cycle of equipment. The incumbent will put various measures in place to manage breakage ratios, including staff education and accountability.
Responsibilities include but are not limited to:
The Stewarding Manager acts as a leader at the NAC and the Food and Beverage department by demonstrating the highest level of professionalism and integrity in all aspects of the work. With a strong focus on continuous improvement, the Stewarding Manager will always be looking for opportunities to do things better.
- Supervise the duties of all stewarding department employees, facilities, operation and costs;
- Supervise the sanitation, cleanliness, hygiene as well as the quality level of product and services;
- Ensure Back of House areas are maintained to the highest cleanliness standards and cleaning schedules are followed and completed;
- Direct and assist Stewards to make clean up more efficient;
- Ensure water temperature, and chemical levels are appropriate for cleaning and documented;
- Work closely with the Chef, Banquets & Catering Manager to anticipate departmental needs;
- Work with all departments to ensure equipment that is required for service are available when needed;
- Take all necessary actions to reduce the loss and breakage of silverware, flatware and glassware;
- Supervises employees ability to follow loss prevention policies to prevent accidents and control costs.
- Manage all linen and kitchen uniform inventories;
- Manage all Food & Beverage compost, waste and recycling programs;
- Maintain clean and sanitized ice machines and walk-in coolers to ensure proper working order and free of mould.
Skill Requirements
- Four (4) years experience in a similar sized Food & Beverage operation with management as an asset;
- Excellent computer skills including proficiency in Microsoft Office and Teams;
- Strong knowledge of Food and Beverage trends;
- Strong organizational, interpersonal and communication skills;
- Ability to work under pressure in a busy environment;
- Fluency in both official languages is an asset.
