Job Description

Chef De Cuisine - Venues (Full Time)

As Chef De Cuisine (Venues), your creative flair and passion for food will lead your culinary team to superior food experiences to our guests. Though your effective leadership and innovation, you will create concepts and menus that place Fairmont Hotel Macdonald Restaurant on the map as the “Hottest Place in Town”.

What you will be doing:

Reporting to the Executive Chef, responsibilities and essential job functions include but are not limited to the following:

  • Work in partnership with the Executive Chef you will execute the smooth and flawless operation of the Restaurant
  • Accountable for managing the day to day operations of the kitchen with active presence on the floor, leading your team to deliver service excellence.
  • Accountable for driving revenue and profit through the development and implementation of menu design, strategies, practices and promotions while in keeping with the overall concept
  • Effectively manage the departmental budget through purchasing of production needs, inventories, pricing, and labour cost controls, Effectively recruit and onboard new colleagues
  • Train and lead the team in all aspects of the department and ensure service standards are followed
  • Promote the growth and development of internal talent
  • Maintain the safety and sanitation of the kitchen
  • Collaborate with other departments to ensure effective operation of the hotel
  • Working in partnership with the Executive Chef, create and maintain all restaurant menus in keeping with the overall restaurant concept.
  • Constantly drive innovation to be the “Hottest Place in Town” by actively promoting your restaurant within the community
  • Adhering to all Company policies, procedures and values

Physical Aspects of Position (include but are not limited to):

  • Constant standing and walking throughout shift
  • Frequent lifting and carrying up to 30 lbs
  • Occasional kneeling, pushing, pulling, lifting
  • Occasional ascending or descending ladders, stairs, and ramps

Qualifications

Your experience and skills include:

  • Demonstrated passion for the industry and guests
  • Knowledge of current trends
  • Previous leadership experience in Kitchen/Culinary environment
  • Proven ability to drive revenues and profit, without sacrificing colleague and customer experiences
  • Proven ability in menu concept and design, effective marketing, and on-line reputation management
  • Strong business acumen
  • Excellent communication and organizational skills
  • Strong interpersonal and problem solving abilities
  • Excellent work ethic with a high degree of responsibility
  • Ability to work cohesively as part of a team and build relationships

Must be legally eligible to work in Canada. The hotel is unable to assist candidates in obtaining work authorization documents

Salary Range: $59,000.00 - $85,500.00 CAD Gross Annually
