THE POSITION
The Chef at the Saddleroom Grill is responsible for creating and planning menus, overseeing kitchen operations, and ensuring the highest standards of food quality. The ideal candidate will possess proven culinary and managerial skills, along with a passion for creating delicious and innovative dishes that cater to various dietary needs.
This role requires a hands-on approach, as the Chef will work closely with the culinary team, providing support and coaching. A genuine passion for food is essential, as the Chef will enhance the food and beverage offerings at both the Saddledome and McMahon Stadium.
Ultimately, this position aims to ensure that the Saddleroom Grill operates efficiently and profitably while delivering a memorable dining experience to our guests.
KEY ACCOUNTABILITIES

Create menus weekly during the Flames season and for any other events required.

Work closely with the Culinary Director to ensure that the restaurant’s operation aligns with CSEC’s vision.

Provide fun and exciting food options to enhance the fan experience.
-
Maintain a complete understanding of the proper maintenance and use of equipment.
-
Monitor and uphold cleanliness, sanitation, and organization in all kitchen areas.
-
Adhere strictly to provincial sanitation and health regulations.
-
Evaluate food consumption, plan production, and order supplies based on business volumes.
-
Oversee production and manage food costs to stay in budget.
-
Conduct monthly inventory and upload in Yellow Dog software.
-
Cost menus and recipes in YellowDog when changing menus.
-
Develop recipes and syllabus sheets for BOH team.
-
Take a hands-on approach to drive productivity and ensure the quality of food production.
-
Collaborate closely with the restaurant manager to ensure smooth restaurant operations and provide an exceptional dining experience for our guests.

Maintain clear communication between FOH and BOH teams, especially during service.
-
Conduct daily line-ups to both BOH & FOH teams and conduct menu tastings.
-
Manage the hiring and performance evaluation of culinary staff in the Saddleroom kitchen to align with the labor budget.

Ensure all assigned staff are present and document any late arrivals or absences.

Prepare and assign production and prep tasks for staff, reviewing all priorities.
-
Communicate any assistance needed during busy periods to the Culinary Director to ensure optimal service for guests.

Ensure all cooking assignments are completed as required.
-
Work at off-premises events assigned and might be required to drive a truck.

Attend designated meetings or training assigned by CSEC;
-
Be available for additional assistance in other outlets as needed;

Actively participate in safety programs and follow policies;

All other duties as assigned
THE INDIVIDUAL
The ideal individual will have the following background:

3+ years’ experience in a Chef de Cuisine position or higher working in a fast-paced high-end restaurant

Ability to analyze and interpret financial information related to food, menu and labor costing
-
Strong planning, organizational, and time management skills
-
Computer skills (Word, Excel, Outlook, etc.)
-
Ability to work under pressure and meet established goals and objectives
-
Financial and business development experience
-
Superior customer service, team building, and conflict resolution skills
-
Very strong communication, problem-solving, decision-making, and interpersonal skills
-
Experience with F&B management software (Square, Yellow Dog, etc…)
-
Demonstrate flexibility with schedule
CERTIFICATIONS

Professional cooking diploma - Red Seal mandatory
-
A high school diploma is considered an asset
-
An advanced Food Safe certificate is required.
