Job Description As part of the Platinum Club, you will be responsible for the creation and service of outstanding food as well as providing first-rate customer service and best-in-class leadership.

  • Train, empower, and mentor the culinary team on a daily basis.
  • As a CDC in our Premium Clubs, you will need to be responsible for creating original and exciting premium fine dining menus
  • Work an event based schedule that includes weekends, evenings, and holidays, that follows the larger schedules of the NBA, NHL, and Live Nation.
  • Schedule staff according to current CBA guidelines.
  • Coordinate all food ordering and requisitions for restaurant requirements with the purchasing department.
  • Work with nutritionists to create menus for professional athletes.
  • Source menu requirements for the entire tenure of the menu.
  • Work with Managers to ensure accurate transfers and end-of-night reports accurately reflect our revenue and sales.
  • Work with the MLSE Culinary team to create a first-class culinary experience.
  • Handle food cost and operating expenses effectively.
  • Provide outstanding customer service and food quality satisfaction.
  • Actively participate in all relevant MLSE departmental meetings and growth programs.
  • Assist with other related functions as assigned by the Culinary Director and Executive Chef.

Qualifications Note: Before reviewing the qualifications listed below, we want you to know that we understand you may not meet all the qualifications described and have other relevant expertise and experience.

  • Journeyman’s Cooks Papers (or equivalent in practical experience)
  • 3-4 years sous chef or higher experience in upscale or fine dining restaurants, with experience in food costing and fine dining menu creation.
  • Proficiency in managing multiple catering events at the same time and working with BEOs (Banquet Event Order).
  • Must be proficient in Food Safety and be able to train cooks and hold them accountable in all aspects.
  • Knowledge of beverage service and alcohol policy.
  • Experience in large quantity cooking and high-volume line expediting.
  • Ongoing awareness and responsiveness to client satisfaction.
  • Outstanding interpersonal, presentation, and communication skills, where building a rapport comes naturally.
  • Proficient in MS Office and Restaurant POS.
  • Understanding of Industry business principles.
  • Available to work evenings/weekends, as the need arises.
