Bingemans is looking for a Chef de Partie for our Culinary Pastry department! The pastry chef will prepare and garnish all types of pastries, cakes, pies, muffins, and brioche to Bingemans high standards.
Responsibilities include:
- Menu development in collaboration with the Executive Chef
- Following recipe specifications and maintaining top quality/appearance
- Administrative duties including ordering, creating production sheets
- Plating and arranging banquet desserts; setting up attractive buffets
- Enhancing current presentation and selections
- Basic pastry/bread production and portion control
- Ensuring ingredients are rotated, dated, labeled, and handled safely (gloves required)
- Keeping workstations and bakeshop clean, safe, and sanitary
- Coordinating with the catering chef about daily forecasts and functions
- Open communication with other pastry department and kitchen colleagues
- Facilitate training and development of other pastry department colleagues and those willing to learn new skills
- Managing inventory, minimizing waste, and reducing overproduction
- Cross-training and understanding baker’s duties and all pastry equipment
- Reporting equipment issues when observed
Qualifications
- Practical baking component will be required, and is part of the interview process
- Previous experience in a similar role within an equivalent property
- Culinary Apprenticeship or an Interprovincial Red Seal certification or equivalent
- A genuine passion for pastry arts
- Availability to work flexible shifts, including weekends and all major holidays
