This is more than just a hotel restaurant, it’s a social destination designed to surprise, delight, and connect guests through food, atmosphere, and experience. With the support of Germain Hotels and Scale Hospitality, this concept will bring a fresh, modern perspective to Toronto’s dining scene from the heart of the Entertainment District. We’re building a vibrant new restaurant at Le Germain Hotel Toronto Mercer, a space where bold creativity, team culture, and guest connection take centre stage.

We’re looking for a Pastry Chef to lead the pastry program at our new restaurant at Le Germain Hotel Toronto Mercer — a refined, modern space where creativity, technique, and guest experience go hand in hand. With an eye for detail and a passion for your craft, you bring imagination and precision to every dessert, elevating each dining moment into something memorable.
In this role, the Pastry Chef reports to the Chef de Cuisine and works in close collaboration with the culinary and service teams to uphold quality, spark innovation, and bring our shared vision to life. This role’s primary focus is to craft and oversee all pastry offerings, ensuring each item is thoughtfully executed and beautifully presented across breakfast, brunch, dinner, in-room dining, and banquets.
WHAT YOU’LL DO

Prepare and craft in-house pastries for our restaurants while respecting quality standards and adding your creative touch.

Design and execute dessert decorations for both restaurants, ensuring harmony of colors, textures, and flavors.

Collaborate with the Executive Chef to develop new recipes and create seasonal or themed desserts.

Prepare various baked goods and pastries (cookies, scones, etc.) for banquet breaks.

Make molded chocolates for turndown services at our restaurants and hotels nationwide.

Create homemade syrups for our restaurant bars, in collaboration with the mixology teams.

Participate in the monthly inventory of pastry supplies, ensuring effective stock management and adherence to hygiene standards.

Mentor and supervise pastry interns, teaching them techniques, maintaining standards, and sharing your passion for the pastry arts.
WHAT YOU BRING

At least 2 years of experience as a Pastry Chef in a full-service restaurant or hotel environment.

Mastery of pastry, chocolate-making, and bakery techniques, with a sharp eye for detail and presentation.

Ability to innovate and create unique desserts while honoring culinary traditions.
