Overview:Responsibilities:
The incumbent in this position is responsible for the overall operations of the back of house and kitchen area of the pastry. This role is responsible for ensuring Hard Rock culinary standards are upheld, that the food looks good and is cooked properly, the portions are correct, and it is cooked and served quickly.
Essential Duties and Responsibilities:
- Demonstrate financial comprehension of Pastry budget.
- Effectively control costs of food and related purchases in alignment with budgeted expectations.
- Manage staff schedules in accordance with the kitchen’s budget and forecast models.
- Maintain the highest standards of brand, local health, safety, and food preparation hygiene requirements.
- Support the team in consistent execution of all systems and processes to consistently deliver all products and services to brand standards.
- Support senior management in building a highly functional hourly team who share a common vision and values surrounding the overall success of the kitchen.
- Develop the kitchen team in all aspects of kitchen execution from 100% recipe adherence.
- Foster an environment of customer service in which all team members put the guest first in every situation.
- Hires, trains, motivates, evaluates, and supervises staff to ensure that employees receive adequate guidance and resources to accomplish established objectives.
- Understands vision and department objectives, standards, guidelines, and budget to achieve effective supervision of department.
- Responsible for storage of food items to ensure quality of food and compliance with health requirements.
- Actively involved with purchasing department to ensure high quality of food products.
- Required to meet budgetary guidelines for food cost, labor cost and miscellaneous costs.
- Attend and participate in meetings, completing follow-up as assigned.
- Perform work regularly and predictably.
- Responsible for cleaning and sanitizing work and public spaces.
- Other duties as assigned.
Qualifications:
- 6 to 10 years of food production and culinary management experience preferred.
- Previous management experience
- Previous pastry experience
- Preferred experience in Casino, Hotel/Large Convention Banquet production facility/Cruise Ship
- Knowledge in Desserts-banqueting/ Fine Dining/Retail/Amenity size desserts, Varrines, Competition size Sugar and Chocolate Sculpture
- Knowledge in Breads & Doughs i.e. Breakfast Quick Breads, Laminated Dough, Savory Doughs
SKILLS
- Maintaining a well-groomed appearance
- Following all uniform guidelines
- Practicing all general safety & sanitation standards
- Recycling products, where possible
- Remaining calm in a hectic, fast-paced atmosphere
- Demonstrating a high level of organization, attention-to-detail and a sense-of-urgency
- Displaying a positive and outwardly friendly attitude toward guests and co-workers
- Preferred Experience in Casino, Multi unit Hotel or Cruise Ship, Large Convention Centers
- Practical knowledge in Quick Breads, Laminated Dough Items, Verrines, Buffet Style Desserts, A la Carte Desserts, Retail items Petite Gateau, Chocolate and Sponge items, Amenity Desserts, Sugar and Chocolate Competition Size Sculptures
PHYSICAL DEMANDS
- Ability to stand and sit for extended periods of time.
- Ability to move throughout the kitchen (standing, walking, kneeling, bending) for extended periods of time.
- Ability to frequently move objects (lift, push, pull, balance, carry) up to 50 pounds.
- While performing the duties of this job, the employee is frequently required to stand; walk; use hands to handle, or feel; reach with hands and arms, talk or hear; and taste or smell. The employee must frequently lift and/or move 25 pounds or more.
- The Casino environment is hectic, fast-paced and often crowded and noisy.
- Duties and responsibilities are typically performed in a professional office setting, but there may be times where you will need to be on the Casino Floor or pass through this area. On the Casino Floor, you may be exposed to casino-related environmental factors including, but not limited to, excessive noise.
