About the role

Job Summary:
Forno Cultura is seeking a passionate and skilled Pastry Sous Chef to support our Head Pastry Chef in leading our artisanal pastry production team. This role requires an experienced pastry professional with strong technical knowledge, a collaborative spirit, and a commitment to quality. The Pastry Sous Chef will help oversee day-to-day production, uphold standards of consistency and excellence, support new product development, and mentor junior team members.

Key Responsibilities:

Production & Quality Control

  • Assist in maintaining consistency in taste, texture, and visual presentation across all pastry products.
  • Support the execution of new pastry items aligned with Forno Cultura’s seasonal approach and culinary philosophy.
  • Ensure adherence to quality standards, ingredient specs, and production procedures.
  • Participate hands-on in daily production to meet volume demands.

Team Collaboration & Training

  • Act as a role model of professionalism, efficiency, and culinary care.
  • Support the Head Pastry Chef in training and mentoring team members.
  • Maintain a positive and collaborative environment within the pastry team.
  • Provide guidance on production techniques, mise en place, and cleanliness standards.

Operational Support

  • Help manage daily prep lists and ensure team productivity.
  • Uphold hygiene, cleanliness, and health & safety standards.
  • Communicate with other departments regarding production planning, seasonal items, and delivery schedules.
  • Take responsibility for stock rotation and storage protocols.

Inventory & Organization

  • Assist with inventory checks and monitor ingredient levels.
  • Ensure minimal waste through efficient planning and storage.
  • Support ordering and ingredient sourcing in collaboration with the Head Pastry Chef.

Qualifications & Experience:

  • 4+ years of professional pastry experience, including in high-volume settings.
  • Understanding of artisanal pastry techniques and European baking traditions is strongly preferred.
  • Strong multitasking and time management abilities.
  • Excellent communication and problem-solving skills.
  • Ability to maintain high standards in a fast-paced environment.
  • Experience training or supervising staff is an asset.

Work Environment & Schedule:

  • Fast-paced production kitchen requiring early morning shifts, and weekend and holiday availability
  • Hands-on role with frequent standing, lifting (50+lb), and exposure to baking equipment.
  • Flexibility to work weekends and holidays as needed.
