What You’ll Do

• Work with the Chef de Cuisine to create a rich sushi menu with various main ingredients and raw fish
• Prepare all types of sushi, including maki, nigiri and sashimi
• Manage food preparation activities and ensure timely execution
• Coordinate with front of house and heart of house teams to ensure proper preparation, considering special requests and food allergies
• Prepare menu items that are close to the philosophy of Japanese cuisine
• Monitor food stock and place orders, as needed
• Recommend innovative and modern recipes
• Maintain hygiene principles in all cooking areas and clean your space at the end of the shift

What You’ll Need

• Work experience as a Sushi Chef or in an Asian restaurant
• Solid knowledge of sushi types, cutting techniques, and rolling methods
• Ability to work efficiently and accurately in a fast-paced environment
• Flexibility to work various shifts, including weekends and holidays
• Culinary school certification is an asset
