A LITTLE ABOUT US...
In 1985, Ed McNally founded Big Rock Brewery Inc. (“Big Rock”) to contest the time's beer trends. Three bold, European-inspired offerings forged an industry at a time heavy on easy drinking lagers and light on flavour. Today, our extensive portfolio of signature beers, ongoing seasonal offerings, ciders (Rock Creek Cider® series), RTDs and custom-crafted private label products keep us at the forefront of the craft beer revolution and still proudly contesting the beer trends of today.
SUMMARY
Reporting to the Brewing Manager, the Brewing Lead Hand is responsible for ensuring that all duties required to meet brewing, cellaring, filtration demand are being fulfilled, this includes but is not limited to operators are following standard operating procedures, documentation of wort / beer transfer records are accurate and up to date, can help in all areas of the brewing department if needed.
RESPONSIBILITIES
- Inform Brewing Manager / Brewmaster of any brewing, cellaring, fermentation and filtration procedure / equipment anomalies
- Ensure Fermenters are pitched according to schedule and Wort cooling temperatures and aeration is correct
- Monitor brew sheets, tank reports, fermentation charts, filtration reports and fermenter black boards to ensure they are all completed properly and on time
- Ensure gravities are taken at appropriate times and fermenter CO2 exhausts are closed at the proper gravity
- Oversee free rise and cooling to ensure it is done properly and on time
- Maintain head pressures on fermenters at pre-determined levels
- Oversee the CO2 analysis to ensure completion at proper times during maturation and all levels are within specifications prior to filtration
- Ensure dilution and carbonation of beer, cider and coolers are done correctly
- Ensure all yeast dumps, transfers are done on schedule or adjust as needed
- Assist Brewing Manager in taste testing all beer prior to filtration
- Follow the proper safety precautions regarding use and handling of chemicals
- Schedule the operation of some of the above duties and adjust as deemed appropriate, ensuring the correct coverage for the department and notify the Brewing Manager and Brewmaster of any changes made to the original scheduling.
- Ensure various data entries are up to date and accurate.
QUALIFICATIONS
- Minimum 5 years hands-on brewing experience (ideally in a craft brewery environment).
- General mechanical aptitude, good troubleshooting, and quick learning skills.
- Knowledge of CIP practices and cleaning chemicals, and WHMIS.
- Good math and computer skills with working knowledge of MS Office Suit
- A positive work attitude, with the ability to multi-task; reliable.
- Must be physically fit to be able to spend long hours standing and perform occasional medium to heavy lifting (e.g. specialty malt or hops up to 30 kgs).
- Ability to perform duties to a high level of standard under minimal direct supervision.
- Required to work rotational shifts, including nights weekends and potentially statutory holidays (time worked will be compensated according to employment standards).
- Candidates will need to satisfactorily complete a brewing knowledge assessment.
WORKING CONDITIONS
- Sitting, standing, and bending is required.
- Occasional lifting to 45 kg’s.
- Frequent exposure to various temperatures
- Possible exposure to dangerous/hazardous materials
- Required to work rotational shifts, including nights weekends and potentially statutory holidays (time worked will be compensated according to employment standards).
- Safety equipment required, e.g. steel-toed safety boots, safety glasses/goggles, etc.
