Food Services operates two cafeterias and Campus Caterers and works closely with Culinary Arts, Professional Baking, and Hospitality Management to provide food services to the campus community. Food Services is part of the Ancillary Services team.

Duties:

  • Oversee the food preparation, production and serving for cafeteria and catering operations, as per recipes, cooking procedures, productions levels and standards of quality determined by management.
  • Produce all menu items, as per recipes and cooking procedures.
  • Assist with menu writing, recipes, scheduling, and food costing.
  • Order food and supplies in accordance to institution's contract suppliers, while consulting other Food Services operations and Culinary Arts with their ordering needs.
  • Receive and count inventory items.
  • Open and close work areas.
  • Provide excellent service to all cafeteria and catering customers.
  • Train new employees.
  • Maintain supportive and positive work environment for team of food service workers, cooks, prep cooks, dishwasher, and other food services/culinary employees.

Required Qualifications:

  • Minimum of three years experience, including kitchen supervisory experience.
  • Canadian Red Seal in cooking.
  • Competent at menu costing to achieve desire food cost.
  • Assist with managing schedules in accordance with employment policies and labour cost targets.
  • FoodSafe certificate.
  • Experience with a wide variety of cooking equipment.
  • Excellent service, communication and organizational skills. Proven ability to meet deadline and production quotas.
  • Proven ability to work well under pressure.
  • Ability to work without direct supervision.
  • Demonstrated technology competencies to work with MS Outlook

Preferred Qualifications:

  • Previous experience administering an operating budget and managing food/labour costs.
  • Two years' experience as a Head Chef or Executive Chef in a restaurant or institutional setting.
  • Developed training programs for kitchen employees.
