THE IMPACT OF THIS ROLE
As Director of Food & Beverage, you will lead our Food & Beverage Division — including all food and beverage outlets, kitchen, stewarding and event operations — ensuring the highest level of quality and service and operational excellence.
KEY RESPONSIBILITIES
o Maintain complete knowledge of and comply with all departmental policies, service procedures and standards.
o Oversee all food and beverage outlets, kitchen, stewarding and event operations and serve as a member of a Executive Committee.
o Design and develop division policies and operating budget including, but not limited to staffing, forecasts and payroll costs.
o Prepare, implement and maintain division standards and control objectives.
o Participate in establishment of a marketing and public relations plan for F&B.
o Monitor productivity guidelines for all F&B departments and maximize profits.
o Establish and implement annual objectives for F&B department.
o Prepare and maintain operating budget. Attend budget meetings on a regular basis.
o Ensure that required operating licenses and permits are displayed as required by law.
o Work closely with all Executive Team members in supporting and achieving the hotel's goals and objectives.
o Support and uphold hotel philosophy concerning hiring, employee relations, supervision, and disciplinary action.
o Work closely with Managing Director in supporting and achieving the hotel's goals and objectives.
o Ensure the F&B department operates based on the departmental mission statement.
o Respond in courteous, professional and rapid manner in order to resolve all guest and staff difficulties.
o Supervise, direct, coordinate, influence and persuade staff in order to maintain service standards of hotel.
o Interpret and comply with a variety of instructions furnished in written, oral, diagrammatic or schedule form.
o Perform a variety of duties, often changing from one task to another of a different nature without loss of efficiency or composure.
o Additional responsibilities as assigned by the Managing Director.
CRITICAL SKILLS & QUALIFICATIONS
o Minimum five years hotel experience with five years management experience in a similar role. Luxury or ultra-luxury experience is preferred.
o Minimum five years’ experience driving service standards in compliance with Forbes Travel Guide and LQA standards with proven results.
o Strong and solid experience in relevant activations and pop ups for outlets in a timely manner.
o Bachelor's degree in hospitality, hotel management, business or a relevant field of work, or an equivalent combination of education and/or work-related experience.
o Prior exposure to banquets, room service and dining room operations; thorough knowledge of first-class food and beverage operations; thorough knowledge of imported and domestic wines; thorough knowledge of budgeting; ability to plan, implement and design operating standards and procedures; ability to effectuate quality and quantity control standards.
o Must be able to exert physical effort in transporting 50 pounds, endure various physical movements throughout the work areas.
o Must have excellent communication skills and be able to read, write, speak, and understand English.
