About the role
Night Baker
As Night Baker you are to report directly to Head Baker and your key duties include mixing feeds, baking, packing, and closely following existing recipes and procedures. In addition to adhering to all food quality and workplace safety protocols, and ensuring timely completion of baked products.
Responsibilities:
- Mixes all leavens, feeds and poolish using either a Planetary Mixer or by hand
- Sets time and speed controls for mixing machines, or blending machines, so that ingredients will be mixed according to instructions.
- Assist with scaling, shaping and proofing all bread, as required by company standards
- Baking all bread related items including but not limited to: buns, sourdough loaves, pitas, baguettes, pullman loaves etc.
- Set times, and controls on MIWE deck oven, as well as rotating ovens, and roll-in proofer
- Measures or weighs flour or other ingredients to prepare feeds or doughs, using scales or graduated containers.
- Prepare labels and bags for packaging as needed for baked goods.
- Maintains adequate supply of Mature Starter, as needed for next day feeds.
- Keeps spoilage/waste to a minimum by ordering and utilizing proper quantities and rotating products.
- Line up baked products on bread delivery trays, labelled appropriately for delivery/pick-up the next day
- Daily checks on fridge and freezer temperatures to ensure proper function
- Cleans, breaks down, and puts away all baking equipment including: ovens, mixers, proofer, floors, freezer, and refrigerators.
- Cleans all surfaces, floors and dish areas in the bread area
- Additional tasks and duties, as needed
Requirements:
- Must be able to lift at least 20lbs, and walk, crouch, reach, bend, and pull with ease
- Must be available to work weekends (Friday-Sunday)
- Must be available for evenings and nights ( hours ranging between 2pm-12am)
- Excellent communication and organizational skills
- Proven skills as a leader, and must be of legal drinking age
- Food Handlers certification
Pay Rate: starting at $19/hour depending on skill
Hours: ranging between 12pm-12am
Job Types: Full-time, Part-time
Pay: $17.20-$21.00 per hour
