About the role

PRIMARY FUNCTION

The Sous Chef plays a critical role in maintaining the highest standards of food quality and presentation in the kitchen, ensuring efficient service and supporting the Head Chef in various operational aspects.

DUTIES & RESPONSIBILITIES

  • Uphold superior food quality and presentation standards across all hotel food outlets.
  • Ensure efficient cooking times during service.
  • Assist the Head Chef in hiring, training, and disciplining kitchen personnel.
  • Train kitchen staff in preparation techniques, station cleanliness, health and safety procedures, inventory management, and time management skills.
  • Collaborate in menu planning and development.
  • Assist in inventory management, paperwork, ordering, and maintaining kitchen cost controls.
  • Oversee adherence to Health & Safety regulations, ensuring cleanliness, product rotation, and staff training in food safety.
  • Be present during peak service times and in the Chef’s absence.
  • Assist in preparation and planning for event tastings and customer requests.
  • Manage food preparation for staff cafeteria in the Chef’s absence.
  • Generate new revenue ideas and improvements within the kitchen.
  • Maintain professional communication in the kitchen and with other departments.
  • Foster a motivated, positive team environment in the kitchen.

EXPERIENCE

  • 2-4 years of supervisory/practical kitchen experience.

  • Culinary education or equivalent experience is beneficial.

  • In-depth knowledge of food safety and handling procedures.

  • Effective time management and organizational skills.

  • Excellent interpersonal and teamwork skills.

  • Strong leadership and mentoring abilities.

  • Ability to work various shifts, including weekends and holidays.

  • Physical capability for tasks involving standing, bending, and lifting.

  • Ability to work under pressure in a fast-paced environment.
