Hospitality Careers at Brookstreet Hotel – Deliver Exceptional Guest Experiences with Us 2nd Line Cook POSITION SUMMARY The 2nd Line Cook (2nd Commis) is a key member of the Brookstreet Hotel Culinary Team, responsible for preparing and presenting high-quality food in a fast-paced hotel environment. Reporting to the Executive Chef, the 2nd Line Cook works closely with the culinary team to ensure consistent food quality, presentation, portion control, and timely service. The successful candidate is passionate about food, takes pride in their work, and thrives in a team-oriented environment where delivering sensational experiences to our guests is the priority. KEY RESPONSIBILITIES Prepare, cook, and present menu items according to Brookstreet standards, recipes, and specifications. Set up and maintain an assigned kitchen station for efficient service. Assist with daily food preparation, including chopping, portioning, sauces, garnishes, and other mise en place. Follow recipes and established food preparation and presentation standards. Ensure all food is prepared and served at the appropriate quality, temperature, and presentation. Maintain a clean, organized, and sanitary workstation throughout the shift. Monitor food quality, freshness, and proper storage. Assist with receiving, storing, and rotating food products as required. Follow proper food handling, sanitation, and health and safety procedures. Work efficiently during busy service periods while maintaining quality and consistency. Communicate effectively with the culinary team members. Assist other kitchen stations and team members as required to support smooth service. Minimize food waste and use products efficiently. Complete opening, closing, and cleaning duties as assigned. Follow all Brookstreet Hotel policies, procedures, and standards. QUALIFICATIONS Previous experience as a Line Cook or similar culinary role. Culinary education or apprenticeship experience is an asset. Strong knowledge of food preparation, cooking techniques, and kitchen equipment. Ability to work efficiently in a fast-paced, high-volume environment. Strong organizational skills and attention to detail. Ability to follow recipes, portion specifications, and plating standards. Strong communication and teamwork skills. Ability to work independently while contributing positively to the culinary team. Knowledge of food safety and sanitation practices. Food Handler Certification is an asset. Flexible availability, including evenings, weekends, holidays, and varying shifts. Must be available minimum three shifts per week.
