Key Duties and Responsibilities: In accordance with the policies and procedures of the Company and the correctional facility. Responsible for: * Ordering provisions from approved suppliers in accordance with the daily menu * Ordering stores in accordance with the facilities requirements. * Taking receipt of stores and provisions and storing correctly in accordance with procedures * Scheduling of all staff including Inmates, where applicable. * Supervision of all staff including Inmates, where applicable. * Training of all staff, including Inmates where applicable, on a daily basis in the procedures of a foodservice environment. * Training of all staff, including Inmates where applicable, Inmates in the basic health and hygiene codes and the monitoring thereof. * Training of all relief staff as required. * Liaison with authorised correctional personnel with regards to special requests. * Monitoring and implementation of special diets to Inmates. * Preparing, cooking and presenting the required number of meals at the correct time and in the correct condition to Inmates in accordance with the facilities meal timings. * Ensuring all safety and hygiene practices are strictly adhered to. * Reporting in accordance with procedures all damages and repair requirements to designated personnel. * Ensuring that all company codes, procedures and requirements are fully met. * Completion of all reports as required. This is to include Inventory extensions, period end summaries, the preparation of payroll, purchase summaries, transfer forms, meal count forms and any other related reports as required. * Invoicing and collection of accounts receivables as necessary. * Investigate any client or company concerns in the first instance. * Responsible (in collaboration with the District Manager) for all hiring and discipline of staff. * Performing other related tasks as required by the District Manager. Qualifications: * Must have Foodsafe level two or equivalent certificate. * Grade 12 or equivalent combination of education, training and experience. * Must have five years previous managerial experience, preferably in an institutional environment * Must pass and maintain a criminal record check and comply with the centre’s security requirements.

Requirements
