Job Summary: The Commissary Production Cook Sr. is responsible for producing and preparing all food for delivery to the Stella’s restaurants. This requires 100% accuracy in adherence to Stella’s specifications, standards and recipes. In addition to production duties, the Senior Cook assists in overseeing daily kitchen operations during the absence of a manager. This includes supporting junior cooks, maintaining workflow, and ensuring the highest standards of food safety, quality, and efficiency. Key Responsibilities: * Measure, prepare, and portion ingredients according to Stella’s recipes and production sheets. * Maintain 100% accuracy and consistency with Stella’s food specifications on every order. * Adhere to Manitoba Food Safe requirements to ensure efficient, safe and sanitary food production, receiving, food storage and facility maintenance * Organize and coordinate daily production tasks and workflow. * Demonstrate proficient knife skills and proper handling of kitchen tools. * Work efficiently across multiple stations to meet production demands. * Monitor and maintain inventory levels, ensuring accurate product rotation using the FIFO (First In, First Out) method. * Perform daily and weekly inventory counts and report discrepancies or shortages. * Train, mentor, and support junior cooks in production techniques, food safety, and proper kitchen practices. * Maintain accurate records of waste, temperature logs, and workstation checklists. * Execute cleaning checklists and uphold Stella’s “clean as you go” policy throughout the shift. * Ensure proper storage, labeling, and cleanliness of walk-in fridges, freezers, and dry storage areas. * Maintain open communication with management to ensure efficient workflow and issue resolution. Qualifications: * Maintain Manitoba Food Handler and WHMIS certificate * Previous experience in a commercial kitchen or commissary environment preferred. * Strong knowledge of cooking techniques, kitchen procedures, and food safety * Ability to work efficiently under pressure and meet production timelines. * Readiness to embrace leadership responsibilities * Strong teamwork, communication (both verbal and written), and time-management skills. * Knowledge of safe food handling, storage, and sanitation practices. * Physically able to stand for extended periods and lift up to 50 lbs or as required * Required to work a minimum of 25 hours and a variety of shifts including days and evenings.
